DRIED APRICOT CAKE (1952)

This is an oldie but goodie. We enjoy it since it does make just a small cake.

INGREDIENTS

  • 1 cup dried apricots
  • 2 cups water
  • 6 tablespoons of sugar
  • 1 3/4 cups sifted cake flour
  • 1/2 teaspoon of salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon of baking powder
  • 1/2 cup of shortening
  • 1 cup sugar
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 1/4 cup of water

DIRECTIONS

Simmer first 3 ingredients together 30 min. Mash and measure 1/2 cup pulp.


Sift flour, salt, soda, and baking powder together 3 times. Cream shortening and sugar until fluffy. Add egg yolks and vanilla; beat throughly. Add dry ingredients alternately with water and pulp in small amounts. Bake in greased cake pan in 350º. oven 45 minutes. Makes 1 (8x8 inch) cake.
