DUTCH APPLE CAKE
3- med peeled tart apples, sliced 1/4" thick (3 cups)
1- cup plus 3 Tbsp. sugar, divided
1- tsp. ground cinnamon
2/3- cups butter or margarine, softened
1- tsp. vanilla extract
2- cup all-purpose flour
1/8- tsp. salt
In a bowl, combine the apples, 3 Tbsp. sugar and cinnamon; set aside. In a mixing bowl, cream butter and remaining sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour and salt; gradually add to creamed mixture and beat until smooth. Pour into a greased 9x5x3" loaf pan. Push apple slices vertically into batter, placing them close together.
Bake at 300 deg for 1 hour and 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan.
