DUTCH BOTERKOEK - Dutch Butter Cake

Ingredients

1-1/2 sticks butter
1 cup white sugar
1 egg
2 teaspoons almond extract
1-1/4 cups flour
sliced almonds, optional


Grease an 8-inch round cake pan.


Mix margarine and sugar together, until light.


Add egg and extract.


Add flour. Mixture will be quite thick.


Press into the greased cake pan.


Beat an egg, and brush on top. (Don't use too much.)


Bake at 350 for 30-35 minutes. Do not overbake or underbake.


Immediately, sprinkle with sugar (and sliced almonds, if using).

This is our family favorite and travels well. I get requests to send it to people on their birthdays, and even my son in the Marines Kuwait, then Iraq, and back to Kuwait. You can get the metal pan at Walmart---last time I purchased it was a $1.49. Mix, Bake, Cool, and Mail! (The pan protects the cake.)

This is very close to something I remembered from childhood, and had been looking for. Here is my variation: 1/2 pound butter, 1 1/2 cup white sugar, 1 cup whole purpose flour, 1/2 cup whole wheat flour, 2 eggs, 1t baking powder 1t sea salt, 3T vanilla extract, 1 cup chocolate chips, 1 cup pecan pieces soften butter. add to sugar, whisk until well-mixed. add eggs and vanilla, whisk again. add chips and pecans, mix with spoon. combine flours, salt, and baking powder, mix. add to the butter/egg mix, stir until evenly mixed. grease 9 inch pan, add the mix to it, bake 350 for 30 mins or until inserted knife comes out clean. Thank you for helping me bring back a part of my childhood I might have lost...
