Dairy Delight In Pecan Crust
2 cups all-purpose flour
1 cup butter, melted
1 cup chopped pecans
1-1/4 cups heavy cream, whipped
2 pkgs. (3.4 oz. ea.) instant vanilla pudding mix
2 pkgs. (3 oz. each) cream cheese, room temperature
2-1/2 cups cold milk
1/2 cup sifted powdered sugar
2 medium ripe bananas
1 cup heavy cream, whipped
1/2 cup flaked coconut, toasted
1/2 cup chopped pecans, toasted
Position rack in lower third of oven and preheat to 350ºF degrees. Combine flour, pecans and butter; pat into 9 x 13 inch baking dish. Bake until light brown, about 25 minutes. Let cool completely.
Beat cream with cream cheese and sugar until thoroughly blended. Spread evenly over crust. Cover and chill. Whisk pudding mix with milk until thickened. Spread over cream cheese layer and chill. Thinly slice bananas and arrange in single layer over pudding.
Fold pecans into whipped cream and spread over bananas. Sprinkle with coconut. Chill thoroughly.
