Damn Good Vegan Caesar Salad

1 head romaine lettuce, chopped
1/2 pint cherry tomatoes, halved

1/4 cup water
1/4 cup walnuts
1 tablespoon miso
1 teaspoon yellow mustard
1 small clove of garlic
1 tablespoon lime juice
1 tablespoon soy sauce
3 tablespoons olive oil
Salt & pepper, to taste

1. Chop your lettuce and place in a medium to large serving bowl.

2. Half your tomatoes and place in the bowl with the lettuce.

3. Combine all the dressing ingredients in a blender and blend until mostly smooth (some texture is good for this dressing).

4. Toss with lettuce, tomatoes, and ENJOY!

*Tasty Tip #1: Love topping this salad with homemade vegan croutons (as easy as cubed bread drizzled with olive oil, salt & pepper and Italian seasonings toasted in the oven).

*Tasty Tip #2: To test the dressing to make sure the flavors are balanced, take a piece of your lettuce and dip it in the dressing. Adjust to taste.

Creamy and rich with the the zing of a traditional caesar, this dressing NAILS it on flavor. I love this dressing and everyone I make it for loves it too! (Shhh. No need to tell them it's vegan.) Kid tested, non-vegan approved.
