Dana's Roasted Chicken
1 whole roasting (or other) chicken
2 garlic cloves
Rosemary, thyme, or other herbs depending on your taste
Preheat oven to 400 F
Rinse and dry chicken
Rub salt over and under the skin and in the cavity
Peel garlic and crush with the side of a knife
Rub garlic under the skin. Either leave pieces under the skin or put in the cavity
Rub herbs under the skin if desired. Leave under the skin or put in the cavity
Put sliced carrot and onion in the cavity
Put Chicken in a roasting pan breast side down
Cook a 5 lb chicken for 1 hour and 15 minutes. Adjust time according to the size of your chicken.
When done, let the chicken sit for 5 - 10 minutes before carving. Remove the skin and carve as desired.
