Dan’s Country Style Coleslaw Cucumber Salad
75 (8 small apples) small apples
50 cups (5 cups) fresh cabbage, chopped
4 pounds (1 ¼ cups) raisins
6 cups (2/3 of a cup) carrots, shredded
1 cup (5 tsp) lemon juice
Cinnamon, to taste
1 cup sour cream
¼ to 1/3 cup apple cider vinegar
1 teaspoon dill
4 dashes hot sauce
2 onions, chopped
Salt and pepper to taste
Core, then slice up apples. Add to shredded cabbage, raisins and shredded carrots. Toss in lemon juice. Add cinnamon to taste.Refrigerate for 2 hours. Serve chilled.
In a large mixing bowl, combine all ingredients except cucumbers.
Slice cucumbers and add to dressing.
Chill for an hour and serve.
