I got this recipe (and as always, modified it to my tastes!) from my friend AJ. But, I think it is a perfect "date" are most my humble opinion.


  • In a large stock pot:
  • 1/4c. olive oil
  • 1/4 c. melted butter (optional)
  • lots'a sliced mushrooms
  • 1-2 bundles green onions chopped
  • 1 Tbsp. flour
  • 1can chicken broth
  • Add all those ingredients together and cook 3 mins. on Med-High
  • Add and cook another 5 mins. on Low:
  • 3 cloves garlic, chopped
  • Juice of 1/2 fresh lemon(or to taste)
  • 1 Tbsp. Parsely...I prefer italian flat leaf
  • salt and pepper(to Taste)
  • Add and cook 8 mins. on Med- Low:
  • 1 can artichoke hearts, well drained
  • Small jar/can roasted red peppers, well drained and sliced
  • 1 Tbsp.(or more if you like them) Capers, well drained
  • 4-5 Tbsp. Parmesan Cheese


  • Throw in cooked pasta toss and serve. Garnish with sliced sun dreid tomatoes and/or roasted pine nuts and/or freshly grated parmesan/romano
  • Nice green salad, some crusty bread, a nice glass of wine and your evening is set! Light some candles and ENJOY
