Delicious Mixed Berries - Buttermilk Coffee Cake
1 - 64 ounce bag of frozen mixed berries (blueberries, raspberries & blackberries)
1 cup sugar (for the berries)
2 2/3 cups sugar (for the cake)
1 pound = 4 sticks butter
2 Tablespoons vanilla
6 cups all purpose flour
4 teaspoons baking powder
2 teaspoons sea salt
½ teaspoon baking soda
3 cups buttermilk
butter flavored cooking spray
½ cup brown sugar
2 teaspoons cinnamon
In a medium bowl combine the berries and 1 cup sugar; set aside.
In a large bowl cream the butter and 2 2/3 cups sugar.
Add the eggs one at a time beating well after each addition. Stir in the vanilla.
Drain the berries in a colander and set aside.
Combine the flour, baking powder, salt and baking soda; add the creamed mixture.
Fold in berries with sugar mixed in.
Spray a 19½ x 12½ x 3 inch baking pan with cooking spray.
Pour batter in the baking pan. Combine brown sugar and cinnamon, sprinkle over batter.
Bake at 350ºF for 1 hour or until a knife inserted near the center comes out clean.

Once a month we prepare one dish for the men's breakfast at our church and since we had 3 - 64 ounce bags of frozen mixed berries (blueberries, raspberries and blackberries) in our freezer we thought make a coffee cake with these berries, and the results were overwhelmingly very positive. The following recipe makes one cake.
