  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tablespoon of vanilla
  • 2-2 1/2 cups of Zuchini
  • 3 cups of flour
  • 1 teaspoon of salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • Walnuts
  • Raisins


  • Beat eggs and sugar and add in the rest and add Zuchini last to a very thick batter. Bake in the oven at 325 F for 1 hour or until done. Test with a toothpick. ENJOY!!


This recipe was given to me many years ago by a dear friend and I use this recipe every year to make bread with the zuchini out of my garden! Everyone loves this!
