  • 2/3 cup precooked white rice
  • 1 can crushed pineapple ( 8oz)
  • juice of 1/2 of a fresh lemon
  • 2/3 water
  • pinch of salt
  • 1 1/2 cup mini mashmallows
  • 1 banana sliced
  • 1 cup cool whip or whipped heavy cream
  • 1/4 cup chopped maraschino cherries


  • drain pineapple and reserve juice or syrup from can.
  • in a saucepan add rice and water, pineapple juice or syrup and pinch of salt stir mixture
  • bring to boil cover simmering 5 minutes and remoe from heat and let cool
  • add pinapple lemon juice. stir in marshmallows and banana slices. fold cherriesand whippped cream
