INGREDIENTS

  • Servings: 4
  • MEATLOAF:
  • 1lb extra lean ground beef (or ground turkey)
  • 1/2 cup breadcrumbs
  • 1/2 red onion, finely chopped
  • 1 garlic clove, minced
  • 1/4 red pepper, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tsp cumin
  • 1/2 tsp pepper
  • 2 eggs, beaten
  • 1 Tbsp flaxseed oil
  • TOPPING:
  • ½ cup tomato sauce
  • ½ cup brown sugar
  • 1 tsp dried mustard

DIRECTIONS

Mix all meatloaf ingredients in a large mixing bowl. Place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish. Bake at 400 degrees for thirty minutes. Meanwhile, combine topping ingredients. Spoon some of the topping over meatloaf. Bake for another 30 minutes longer or until well cooked, occasionally spooning some of the remaining topping over loaf. Let stand 10 minutes before serving.


RECIPE BACKSTORY

I found a recipe, “Best Ever Meatloaf”, on Cookn’. It wasn't the healthiest, but it was delish! I briefly followed the caveman diet and found a meatloaf recipe out of a Paleo Recipe Book. I ended up combining the two recipes to create a semi-healthy version of the “Best Ever Meatloaf” and I think it actually tastes much better than the original!
