Diet Coke Cake

INGREDIENTS

  • 1 box of cake mix (any brand)
  • 1 can of soda (Diet Coke)

DIRECTIONS

Mix the diet coke with the cake mix! No eggs, no oil, no water, etc.


If you are using a dark cake mix (Chocolate) I recommend using Diet Coke. However, if you opt for Strawberry, etc. use Diet Sprite.


Follow the heating/temperature directions on the box. It takes a little bit longer to bake though.


For a low fat icing, use Fat Free Cool Whip.


I got this recipe at a Weight Watchers meeting. I thought they were crazy. I love to make these in different flavors. Some people can't even tell that it's not a "real" cake.

I'm not sure how many points this actually is...I think it is around 1 or 2 points for a small serving.

I'm also a WW. I count 3 points for each piece of cake. I have also used the lower sugar cake mix and it works great too. I count 2 points for the lower sugar alternative. I bake the cake in a 9 X 13 and cut the cake into 12 servings.

This recipe works with a fudge brownie mix too. I underbake it slightly, to get little rivers of "fudge" running through the brownies. It's best to use 1 brownie mix + 1 can of diet coke in an 8x8 pan lined with foil or parchment.
