- 4 - 4 oz. chicken breasts
- 2 C. sliced onion and peppers
- 1 C. ketchup
- 1 - 12 oz. can of diet coke
- Place chicken, onion and peppers in a non-stick sprayed skillet. Pour ketchup and diet coke over the chicken. Bring to a boil. Cover. Reduce heat and simmer 45 minutes. Uncover and turn up the heat until coke thickens. You may serve over pasta or rice. Remember to add points for the pasta or rice.
