DILL TILAPIA WITH FRESH TOMATOES

Ingredients

  • 1 lb tilapia filets
  • 3 tbs butter
  • 2 tbs lemon juice
  • 1/4 cup white cooking wine
  • dill weed (to taste)
  • cracked black pepper (to taste)
  • 1 tomato, sliced

Directions

  • Preheat oven to 400 degrees. Place tilapia filets in glass baking dish coated with non stick spray.
  • In cup or small bowl, melt butter. Add lemon juice and wine to melted butter. Pour over filets. Sprinkle dill and cracked black pepper over filets to taste (I like a lot of dill!) Lay 2-3 tomato slices over each filet. Bake 10 minutes for each inch of thickness.

Notes

I made this once trying to recreate a dish I had somewhere. It wasn't even close to what I was trying to do, but I like this even better!
