Why I Love This Recipe
Marinating salmon before grilling isn't exactly new, nor is using maple syrup in Canada, so there are probably hundreds of variations of this recipe out there. This is what works for me!
Ingredients You'll Need
400 grams skinless centre cut salmon filets
Marinade:
1 tbsp sesame oil
1/2 juice of a lime
2 tbsp soja sauce
3 tbsp maple syrup
Salt and white pepper to taste
Garlic, ginger and dill to taste
Directions
Prepare the marinade about 4 to 5 hours in advance. Mix the sesame oil, lime juice, soya, maple syrup, black and white sesame seeds, salt and white pepper, garlic, ginger, and fresh coriander. I leave it to marinade usually for at least 4 or 5 hours, turning several times. I also used skinless salmon as I find the absorption is better.
There are all kinds of variations on this marinade. I almost always use the soja, a citrus juice, something sweet like syrup or honey, and various seasonings. Fun to play with what you have on hand!
Since this is skinless salmon, and since I like to still have some of the liquid around the salmon during cooking, I make a temporary tinfoil “pan” to slide onto the grill. I don’t use all the marinade reserve, just what naturally comes with the pieces of fish. It only takes about 7 minutes on medium high and you don't need to flip it if you're using the tinfoil pan.
