Sounds interesting. I will try it out before Mardi Gras, however. I note that you use both a teaspoon of cayenne and a half teaspoon of red pepper flakes. Sounds a bit hot to me. Are you sure about those proportions? My mom was cajun and always believed that you could always add some more heat to taste (e.g., some hot sauce) but you can't take it out if it is too hot. Since it is your recipe only you know. Perhaps you like it really hot?!

Also, do you mix this with some rice as in Dirty Rice or just serve it on the side.

I definitely enjoy spicy foods, I would most certainly start out using smaller amounts of spices, and then you can add more to your taste. The beer does help minimize some of the heat so be sure to taste it after adding to be sure the heat is still to your liking. I am more of a sop it up with bread person, but rice would make an excellent addition to this recipe. Thanks for your comments and Hope this helps!
Enjoy!
