Red new potatoes (diced)
Sweet onion (diced)
EVOO (Extra Virgin Olive Oil)
Pepper (Jalapeno or Habanero) (diced)
Heat EVOO in non-stick skillet.
Add minced garlic.
Add diced potatoes and onions.
Add spices and peppers.
Form in a circle, mash down slightly.
Let sit for a few minutes and then stir and repeat.
Cook until desired consistency.
I like mine crispy.
