Why I Love This Recipe

My friend Rosemary taught me how to make this when I was visiting her on the ranch she lives at between Villa Grove and Bonanza in Colorado.

It sounds complicated, but it's super easy to make and very healthy & tasty.


Ingredients You'll Need

Uncooked Rice
Uncooked Lentils
Salt
Apple Cider Vinegar
Fresh Lemon Juice


Directions

I use equal parts rice and lentils (1 cup each), but my friend Rosemary uses more lentils.


Soak the rice & lentils separately in water for 8-12 hours.


Combine them, add salt, 1 tbsp lemon juice & vinegar, blend in food processor or blender until it makes a thick paste. Put in a bowl or cake pan, cover with towel and leave in a warm place for 12 hours.


After 12 hours the batter is ready! You can either put it in the fridge or make the fritters. Make them as you would pancakes on an oiled pan. Top with anything you like, from Saag Paneer to Chili, this fritter goes great with any topping. I'm thinking I'd like to make dosa pizza soon.
