Double Chocolate Mint Cookies
1 1/2 cup chocolate chips
2 1/2 cup flour
1 1/2 tsp baking soda
3/4 tsp salt
1 cup butter, softened
2/3 cup sugar
1/3 cup dark brown sugar
2 tsp vanilla
1- 4.7 oz box Andes mints, unwrapped and broken in half
1 cup chocolate chips
Preheat oven to 375
Melt 1 1/2 cups chocolate chips.
In small bowl combine flour, soda, and salt.
In large bowl combine butters, sugars, vanilla.
Beat until creamy.
Add eggs and mix.
Add melted chocolate and beat until fluffy.
Add flour mixture and mix until just combined.
Stir in candies and chocolate chips.
Drop onto cookie sheets.
Bake for 10 minutes.
Let stand for 2-3 minutes before removing.
