Dreamy Mini Cheesecakes
8 oz. cream cheese, softened
1/3 cup sugar
1 large egg
1 tsp. pure vanilla extract
1/4 tsp. pure almond extract
8 drops red food coloring (optional)
12 vanilla or chocolate wafers
Melted chocolate (optional)
Fresh or frozen raspberries (optional)
1. Preheat oven to 350ºF.
2. Using electric mixer at medium speed, beat cream cheese until light and fluffy.
Gradually beat in sugar, scraping down sides of bowl.
Add egg and beat well.
Mix in extracts and food coloring (if using).
3. Arrange paper liners in twelve 21?2-inch muffin cups.
Place a wafer in the bottom of each muffin cup. Evenly divide cheese mixture among cups.
Bake cheesecakes for 25 to 30 minutes, or until edges are lightly browned.
Let cool on wire racks. Refrigerate overnight.
4. Before serving, drizzle with melted chocolate and top with raspberries, if desired.
