Drunk Roast Beef

Serves 4 | Prep Time 20 | Cook Time 200

Ingredients

3 stripes bacon
1 1/2 lbs beef roast, cubed
flour
2 cloves garlic
1/2 cup red wine
1/2 teaspoon salt
6 small onions, peeled
1 cup sliced carrots
1 large baking potato, cubed
4 black peppercorns
4 whole coles
2 bay leaves


Brown bacon in skillet over medium heat until crisp.


Drain on paper towels and cut into 1 inch pieces.


Coat beef in flour and brown, with garlic, in bacon drippings.


Remove garlic.


Add wine, salt and 1/2 cup hot water.


Bring to a boil. Pour into baking dish.


Add remaining ingredents and bacon.


Bake, covered in a 300 degree oven for 2 1/2 - 3 hours til beef is tender.
