DUCK CASSEROLE

Ingredients

  • 2 ducks
  • 1 lrg. yellow onion (chopped )
  • 3 ribs celery (cut lrg. pcs.)
  • 1/2 cup butter
  • 1/4 cup flour
  • 2 sml. Cans sliced mushrooms
  • 1/2 cup light cream
  • 1 tsp. parsley (chopped)
  • 1 pk. Uncle Ben's rice
  • Salt & pepper to taste

Directions

  • Boil duck in water with the cut onion & celery 1-1/2 hr.
  • Remove duck, let cool & debone,
  • set meat aside.
  • Cook rice according to pack..
  • Melt butter in a skillet & sauté
  • onions for 4 minutes then stir in
  • the flour & add mushrooms with
  • The liquid. Add cream, parsley,
  • salt, pepper,
  • Cooked rice & duck meat in a 2-
  • quart dish. Sprinkle with slivered
  • almonds.
  • Bake @ 350 degs. For 25 minutes
