Why I Love This Recipe

Our friend, Terri Masuda, shared this recipe 20 years ago. So moist and it makes a great breakfast. Freezes well, too!

Ingredients You'll Need

Cake:
1 c. salad oil
3 eggs
2 c. sugar
1 t. vanilla
1 t. baking soda
1 t. cinnamon
1 c. chopped nuts (pecans or walnuts preferred)
1/2 t. salt
4 c. apple slices
2 c. flour
Icing:
1 t. vanilla
1 1/2 T. butter
3/4 c. powdered sugar
3 oz. package cream cheese, softened

Directions

Beat salad oil and eggs until frothy. Add sugar and vanilla, beating again. Then add dry ingrediants. Stir until well blended. Fold in nuts and apples. Bake in buttered 9x13" pan at 350 F for 1 hour. Spread icing gently as soon as out of oven.
