EASY APPLE COFFEE CAKE
1- box yellow cake mix
1- (4 serving size) pkg. instant vanilla pudding mix
1- cup sour cream
1/2 -cup vegetable oil
2-3 apples, cored, peeled and thinly sliced
1/2- cup sugar
2- tsp. ground cinnamon
Combine cake mix, pudding mix, sour cream, oil and eggs. Beat for 5 minutes. Pour 1/2 of batter into a greased and floured 10" tube pan. Arrange half of apples over batter. Combine sugar and cinnamon in a small bowl; mix well. Sprinkle half of sugar/cinnamon mixture over apples. Top with remaining batter, remaining apples and sprinkle remaining sugar/cinnamon over apples.
Bake in a preheated 350 deg oven for 1 hour or until cake tests done. Cool in pan for 30 mins remove from pan and cool completely.
I never found the need to glaze this cake, but you certainly could.....I would recommend a confectioners' sugar glaze for it, or simply dust with confectioners' sugar if you wish.
This cake freezes VERY well
