- 300 gr of salted cod
- 5 or 6 tomatoes - diced
- 2 fresh onions - diced
- 1 green pepper - diced
- 1 red pepper
- black olives
- olive oil
- This is a very simple but very tasty catalan dish.
- The only thing whe have to care about is to start preparing it a day before, by putting the cod in water for a day to eliminate the salt.
- When we have the unsalted cod, we have to tear it in small parts and cut in dices the tomatoes, the peppers and the onions. After that, we have to put all the ingredients together in a large bowl and season the salad with some salt and olive oil. We also can dress it with romesco sauce, which will bring a very characteristic taste.
Notes* “esqueixada” means something like “torn food” (to tear = esqueixar)
