BackstoryPerfect as a side dish for a burger or anything off the grill. You can serve spoonfuls over greens, or even scoop it up with tortilla chips!
- 3 ripe avocados
- 1 cup grape tomatoes
- 1 can black beans
- 1 lime
- 1/2 cup chopped fresh cilantro
- 1 clove garlic, diced
- olive oil
- salt and pepper
- Chop avocado into chunks and slice tomatoes in half. In a medium bowl, add avocado, tomato, beans, garlic, and cilantro.
- Season with salt and pepper, drizzle with olive oil and juice of 1/2 lime.
- Toss with a spoon until vegetables are coated and mixed well.
