Easy Avocado Salad
3 ripe avocados
1 cup grape tomatoes
1 can black beans
1/2 cup chopped fresh cilantro
1 clove garlic, diced
salt and pepper
Chop avocado into chunks and slice tomatoes in half. In a medium bowl, add avocado, tomato, beans, garlic, and cilantro.
Season with salt and pepper, drizzle with olive oil and juice of 1/2 lime.
Toss with a spoon until vegetables are coated and mixed well.
Pairs Well With
Perfect as a side dish for a burger or anything off the grill. You can serve spoonfuls over greens, or even scoop it up with tortilla chips!
