4 ripe Roma tomatoes.
2-3 med-sized balls of fresh mozzarella
Fresh basil leaves
extra virgin olive oil
Slice the tomatoes and lay them flat on your serving tray.
Slice the mozzarella, and place that on top of the tomatoes.
Place a basil leaf on top of the mozzarella.
Drizzle with oil and vinegar (go easy on the oil).

When I use this as a dinner side dish, I cube the tomatoes and mozzarella and chop the basil loosely, then toss it all together in a bowl. Less fancy, but just as delicious!
