- 2 boxes Jiffy corn muffin mix
- 2 eggs
- 2/3 C milk
- 2 large jalapenos, seeded and chopped
- 1 C shredded sharp cheddar cheese
- Following package directions, mix corn muffin mix, eggs, and milk in large bowl. Fold in chopped jalapenos and cheese. Pour into greased 9x13 pan. Bake uncovered as per package directions for cornbread. Cut into cubes and enjoy!
NotesI made this with chili this weekend for a neighborhood social. It went fast. Cornbread is always a good side to any kind of soup/stew/chili. This complements both chili and tortilla soup well.
