EASY CHICKEN ENCHILADAS
Easy Chicken Enchiladas

INGREDIENTS
- 4 chicken breasts
- 1 can black beans
- 1 can diced tomatoes and green chiles
- 1 c diced onion
- 3 cans enchilada sauce
- 12-pack of tortillas (burrito size)
- cheese of choice (optional/to taste)
DIRECTIONS
Boil and shred chicken. Mix chicken in with black beans, onions, tomatoes and chiles and 2 cans enchilada sauce. Fill tortillas, folding into an envelope. Place in greased 9x13 pan. Top with remaining enchilada sauce and as much cheese as desired. Bake at 350 for 30-40 minutes. Serves 4-6.
