Easy Citrus Cake

I got this recipe from The Big Book of Baking. It is a great cake for the summer time and is so easy to make! It is very light and fresh and has always been a big hit.

 



This recipe goes with: Lemon Frosting

INGREDIENTS

  • 1 1/2 cups all purpose flour
  • 2/3 cup sugar
  • 3 large eggs
  • 1/2 cup butter
  • 4 TBL milk
  • 2 TBL orange juice
  • 2 TBL grated orange zest
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

DIRECTIONS

Lemon Frosting:


1 1/2 cups confectioners sugar


2 TBL melted butter


2-3 TBL lemon juice (enough to make it spreadable)


1. Preheat the over to 350 F and butter a 9 inch square pan


2. Beat the flour, sugar, eggs, butter, milk, orange juice, zest, baking powder, and salt in a large mixing bowl at a low speed until well blended. Then increase to medium speed and beat for 5 more minutes.


3. Spoon batter into pan and bake for about 40 minutes


4. Cool completely on wire rack


5. Spread the cake with frosting
