EASY CRAB CAKES

Ingredients

  • * 1 egg, slightly beaten
  • * 1/4 cup mayonnaise
  • * 1/2 cup soft bread crumbs
  • * 2 green onions, chopped (tops and bottoms)
  • * 1 tsp. minced parsley
  • * 1/4 tsp. salt
  • * 1/4 tsp. pepper
  • * 2 cans (6 oz. each) crab meat, drained, cartilage removed
  • * 2 Tbl. oil

Directions

  • * 1 egg, slightly beaten
  • * 1/4 cup mayonnaise
  • * 1/2 cup soft bread crumbs
  • * 2 green onions, chopped (tops and bottoms)
  • * 1 tsp. minced parsley
  • * 1/4 tsp. salt
  • * 1/4 tsp. pepper
  • * 2 cans (6 oz. each) crab meat, drained, cartilage removed
  • * 2 Tbl. oil
  • 1. Combine egg, mayonnaise, bread crumbs, onions, parsley, salt and pepper, blending well.
  • 2. Add crab meat
  • 3. Shape into 6 patties
  • 4. Heat oil on med. high in a frying pan
  • 5. Reduce heat to med.
  • 6. Fry each side until browned, 5-6 minutes each side

Notes

I love crab cakes but want them to be easy to make. I went through several cookbooks and ended up taking a little from this one and a little from that until I came up with this recipe.
