EASY CRAB CAKES
Easy Crab Cakes
I love crab cakes but want them to be easy to make. I went through several cookbooks and ended up taking a little from this one and a little from that until I came up with this recipe.

- Preparation Time: 15 min
- * 1 egg, slightly beaten
- * 1/4 cup mayonnaise
- * 1/2 cup soft bread crumbs
- * 2 green onions, chopped (tops and bottoms)
- * 1 tsp. minced parsley
- * 1/4 tsp. salt
- * 1/4 tsp. pepper
- * 2 cans (6 oz. each) crab meat, drained, cartilage removed
- * 2 Tbl. oil
DIRECTIONS
* 1 egg, slightly beaten
* 1/4 cup mayonnaise
* 1/2 cup soft bread crumbs
* 2 green onions, chopped (tops and bottoms)
* 1 tsp. minced parsley
* 1/4 tsp. salt
* 1/4 tsp. pepper
* 2 cans (6 oz. each) crab meat, drained, cartilage removed
* 2 Tbl. oil
1. Combine egg, mayonnaise, bread crumbs, onions, parsley, salt and pepper, blending well.
2. Add crab meat
3. Shape into 6 patties
4. Heat oil on med. high in a frying pan
5. Reduce heat to med.
6. Fry each side until browned, 5-6 minutes each side
