Why I Love This Recipe
Needed a quick tailgate snack so I made these for a lacrosse game. Corndogs are Georgi's favorite but I always wince at the "friedness" of them. This is a great baked instant box recipe. I was so inspired I bought one of the 48 mini muffin tins at Michaels...I made 48 of these in 15 min! If you bake them in a regular sized muffin tin, add a side salad and voila, it's meal!
Ingredients You'll Need
2 boxes Jiffy Corn Muffin Mix (small box usually found bottom shelf near cake mixes)
2 eggs
2/3 cup milk
Pam Cooking spray
Hot Dogs uncooked
Ketchup/Mustard
Directions
Spray muffin tin.
In large bowl, mix first 3 ingredients. Let batter sit for a few minutes while you slice hot dogs. If using reg muffin size, make hot dog bites a decent size. If doing mini, slice only 1" thick.
Spoon batter into tins 2/3 full and place hot dog round in center of each one.
Bake 15-20 for reg size
Bake 8-10 for mini
Muffins are done when outer edges are lightly brown.
Serve with Ketchup and Mustard for dipping.
(Adult Option: Slivers of fresh jalapeño hidden under hot dog in batter for a spicy surprise.)
