Easy Taco Soup
1 lb. lean ground beef
1 medium sweet onion
1 package taco seasoning mix
1 package dry ranch dressing mix
1 15 oz. can pinto beans with liquid
1 15 oz. can kidney beans with liquid
1 can yellow niblets corn
3 15 oz. cans diced tomatoes
1 6 oz. can chopped green chilies
1 1/2 c. low sodium chicken broth (or vegetable broth)
Grated Cheddar or Monterey Jack cheese to taste (optional)
Brown ground meat and onion until browned.
Add taco mix and ranch dressing mixes to the meat and onion and dissolve completely.
Add all remaining ingredients except cheese.
Heat through on medium heat (about 15 minutes)
Sprinkle each bowl with grated cheese if desired.
Serve with tortilla chips.
