Easy Tuna Biscuit Bake

  • Servings: 4
  • 3 tablespoons butter
  • 1/2 cup chopped onion
  • 1 rib celery, chopped, about 1/4 chopped
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon curry powder
  • 2 cups milk
  • 1 can tuna (approximately 7 ounces), drained and flaked
  • 1 cup frozen peas, thawed
  • 1 package refrigerator biscuits (8 ounces) or use frozen biscuits, partially thawed

DIRECTIONS

Melt butter in a medium saucepan; add onion and celery. Cook for about 4 to 5 minutes, or until vegetables are tender. Blend in flour, salt, pepper, and curry powder; cook, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk. Continue cooking, stirring constantly, until sauce thickens and bubbles. Stir in tuna and peas. Heat, stirring, just to boiling point. Transfer mixture to a 1 1/2-quart baking dish; arrange biscuits on top. Bake at 400° for about 20 minutes, or until biscuits are golden brown.
