Easy and tasty chili

Serves About 8 | Prep Time 10 minutes | Cook Time 1 hour 45 minutes


2 lbs 80/20 ground beef
1 46 ounce can V8 juice
1 28 ounce can tomato sauce
1 15 ounce can kidney beans (drained and rinsed)
1 15 ounce can pinto beans (drained and rinsed)
1 and 1/2 cups diced onion
1/2 cup diced green bell pepper
1/8 tsp cayenne pepper
1/2 tsp sugar
1/2 tsp dried oregano
1/2 tsp ground black pepper
1 tsp salt
1 and 1/2 tsp ground cumin
1/4 cup chili powder
8 ounces shredded cheddar
1/4 cup chopped scallions (optional)

In a dutch oven, brown ground beef, when almost done add onions and bell peppers. Drain off fat after browning.

Add remaining ingredients with the exception of cheese and scallions. Bring to a boil. Reduce heat and simmer for an hour and a half.

Place in dish, top with cheddar and scallions.

Pairs Well With


This is an easy chili and has great flavor without being overly spicy. You can dial it up if your taste buds crave higher heat by adding habeneros into the mix. At my age, although I used to like hot and spicy, my digestive system doesn't allow it much anymore.
