Ingredients

  • 1 head cauliflower, separated
  • 1 t basil (+)
  • 1 C water
  • 1 t oregano (+)
  • 1 1/2 t salt, divided
  • 2 cloves garlic, pressed
  • 1 stick butter
  • Juice of 1/4 lemon
  • 1/4 t coarse ground pepper
  • 3 medium zucchini, 1/2” slices
  • 1/2 C grated parmesan cheese

Directions

  • 1 head cauliflower, separated 1 t basil (+)
  • 1 C water 1 t oregano (+)
  • 1 ½ t salt, divided 2 cloves garlic, pressed
  • 1 stick butter Juice of ¼ lemon
  • ¼ t coarse ground pepper 3 medium zucchini, ½” slices
  • ½ C grated parmesan cheese
  • In skillet, ouch cauliflower in water with ½ t salt, about 5 minutes. Pour off water; remove flowerets. Melt butter in skillet; stir in seasonings, including the other teaspoon of salt. Add zucchini first, then cauliflower. Cover. Cook on low heat for 10 minutes, stirring occasionally. Toss with ½ c Parmesan cheese before serving.
