2tbs plain flour or cornflour (for gluten free version)
1 1/2 tsp vegetable oil
1/2 tsp baking powder
2 tbs water

As a mum with kids with allergies and also with having to live with many intolerances to food over time.... I have had to find a really good way of replacing egg in recipes... many tend to be quite nasty and not work so well... but I have worked this substitute that works well in cakes and other egg reliant type recipes...
Its a really good alternative if you have run out of eggs as well... we have had to use it many times due to lack of funds for food shopping and it is made of ingredients we always have on hand....
