- 1/2 cup crushed pineapple -- drained
- 1/4 cup pineapple juice
- 1/3 can apricot preserves
- 1/4 cup brown sugar
- 3 tablespoons cider vinegar
- 1/2 teaspoon salt
- In a food processor, combine all ingredients and process until smooth. Put in saucepan and bring to a boil. Reduce heat and simmer for 5 minutes, stirring constantly.
NotesThis is a very good sauce for egg rolls and keeps well in the refrigerator.
