Egg Salad With Vegetables
3 hard-cooked eggs 2 tablespoons minced carrot
2 tablespoons minced green bell pepper
1 tablespoon minced celery
1 tablespoons minced red onion
1 tablespoon capers, drained and rinsed
Mash the eggs with a fork. Add the carrot, bell pepper, celery, onion, and capers; toss. Stir in the dressing. Taste and adjust the seasoning.

Cook Time: 20 mins to boil eggs

Can use any dressing you want. I like the dill salad dressing on mine.
