Egg White and Veggie Scramble
1/2 cup organic egg whites (I use Organic Valley)
1/4 of a large organic green pepper, diced
1 small organic roma tomato, diced (1/4 cup of any kind of tomato is fine)
1/4 cup organic broccoli florets, chopped small
1/4 of an organic hass avocado, diced
1 tbsp. organic extra virgin olive oil (I use Rozzano)
Heat olive oil in a medium-size pan on medium heat
Dice green peppers, tomatoes and avocado & chop broccoli florets
Add all vegetables to heated olive oil
Let cook for 5 minutes, stirring occasionally
Add egg whites to pan, scramble eggs until cooked thoroughly
Plate egg and vegetable mixture, top with diced avocado
Optional: Toast a piece of 100% whole wheat bread and place egg mixture on top!

I love a colorful, high protein meal after my morning run, and this is perfect! It can, of course, be enjoyed without the run!
