Why I Love This Recipe

I've been tinkering around with date and walnut recipes for a few years now, but needed to switch to an eggless recipe since my husband's family are vegetarians. I found this recipe on 'aayisrecipes.com' while hunting around, and typically it stayed in my bookmarked list for ages. Finally, the cake was tried for my grandad's 90th birthday lunch.

The recipe here is reporduced from Aayi's Recipes (just google "aayis recipes" and find the link under popular posts). Below that I have added the substitutions I made.


Ingredients You'll Need

Deseeded dates - 18
Milk - 3/4 cup
Sugar - 3/4 cup
Oil - 1/2 cup
All purpose flour - 1 cup
Baking Soda - 1 tsp
Cashewnuts - 1 tbsp


Directions

Preheat your oven to 180C, and line/ butter a 5x9 loaf tin or equivalent. (I made twice the quantity and used a 9" square tin. You should have about 1" of batter)


Soak the dates in warm milk/ rum (if the dates are really hard) and then blend the whole thing. I like to leave a few lumps, but blend it fine if you want. Add sugar/ honey to the mixture. Add oil and mix.


Separately, sift the flour and baking soda, and add to the date mixture. Mix by hand till blended.


Pour into tin and bake for 35-40 minutes till done.
