Eggnog-Cherry Nut Loaf

Serves | Prep Time | Cook Time 45 to 50


2-1/2 cups all-purpose flour
3/4 cup sugar
1 T baking powder
1 beaten egg
1-1/4 cup dairy eggnog (or homemade)
1/3 cup cooking oil
1/2 cup chopped walnuts or pecans
1/2 cup chopped maraschino cherries

Homemade eggnog:
2 eggs
1-cup light cream
1/4-cup sugar
1/4 teaspoon ground nutmeg

In mixing bowl, stir together flour, sugar, baking powder and 1 teaspoon salt.

Mix eggs, eggnog, nuts and cherries.

Turn into two 8x4x2 inch loaf pans.

Bake at 350º for 45-50 minutes or till done.

Cool in pans 10 minutes.

Remove from pans, cool on wire rack

I made this yesterday. It was wonderful. the house smelled so good and DH couldn't wait for it to cool and have with coffee. It also would make a nice presentation in a goodie basket.
