Why I Love This Recipe

My sister made this up, it's amazing


Ingredients You'll Need

japanize eggplant (2 small = 1 person) If you can't find these get really small eggplants (and sprinkle very lightly with sugar)
fresh mozzerella ball (1 = 1 person)
fresh basil
italian seasoning
olive oil
pasta sauce (the simplier the better)
parm + romaine graded cheese


Directions

slice the eggpant length wise thinly


slice moz


seperate basil leaves


cook the eggplant either in the oven (baste both sides of eggplant with olive oil and cook quickly 400 (watch, +flip over occasionally)


or cook in skillet with oil


Dap extra oil off eggplant, in deep dish (cover bottom of pan with pasta sauce) layer eggplant , moz cheese, sprinkle parm + rom cheese, basil, italian seasoning.. continue till 2 1/2 inches high.. continue until you have enough for all guests.


Bake in the oven 350 for 10 minutes.. till all is melted together.


this is one of the best eggparm recipes ever!
