Eggs a la Mexicana

Serves 2 | Prep Time 15 minutes | Cook Time 10 minutes

Ingredients

4 ud. chicken egg
2 pcs. Medium Tomato
1 slice onion
2 pcs. serrano chiles
cilantro for garnish
corn oil or sunflower oil for frying
salt (to taste)


The onion and fry chopped serrano chile simmer, very golden. Add chopped tomatoes and stir until thick juice is loose. Add the eggs, stir until the desired texture, add salt after adding the eggs. Served with corn tortilla, accompanied with salsa, refried beans and a coffee.
