Eggs a la Mexicana (Huevos a la Mexicana) are a delicious alternative to your regular breakfast fare. Whether eaten with a side of refried beans and warm corn tortillas or just by themselves, they can turn any morning into a reason to celebrate.


  • 4 ud. chicken egg
  • 2 pcs. Medium Tomato
  • 1 slice onion
  • 2 pcs. serrano chiles
  • cilantro for garnish
  • corn oil or sunflower oil for frying
  • salt (to taste)


  • The onion and fry chopped serrano chile simmer, very golden. Add chopped tomatoes and stir until thick juice is loose. Add the eggs, stir until the desired texture, add salt after adding the eggs. Served with corn tortilla, accompanied with salsa, refried beans and a coffee.
