Eggs and Mushrooms
2 Teaspoons extra virgin olive oil, plus more for brushing
8 Ounces fresh mushrooms, coarsely chopped
8 Large eggs
Salt and ground pepper
In a skillet, heat olive oil until a drop of water starts to pop. Fry mushrooms 5-6 minutes, lower heat and add whisked eggs. Turn once adding salt and pepper.
