Eileen's Fruit Cake
12 oz. flour, 2 3/4 cup
1 pinch salt
1 tsp. baking powder
8 oz. butter, 2 sticks
8 oz. light soft brown sugar, 1 cup
4 large eggs
1 lb. mixed fruit
2 oz glace cherries, halved (optional)
Grease and line an 8 inch round tin. Grease the paper.
Set oven at 350 F.
Sift flour, salt and baking powder.
Cream butter and sugar.
Beat eggs lightly. Add a little at a time to the mixture beating all the time. Fold in Flour. Stir in fruit. Spoon into prepared tin.
Bake in the centre of oven for 1 1/2 hours until firm and skewer leaves mixtue clean.
Turn out and cool on a wire rack.
