More Great Recipes: Cookies

Serves 24 | Prep Time 24 hours | Cook Time 10 - 12

Ingredients

½ cup of shortening
¼ cup of sugar
½ teaspoon of butter extract
½ teaspoon of almond extract
¼ teaspoon of salt
1 ¼ cup of flour

assorted preserves and/or jellies
(preserves work better because they are thicker)

White Icing
¾ cups of confectioners sugar
1 to ½ tablespoons of water


Cream the first 5 ingredients together, then add the flour and mix it well until a smooth dough is formed.


Roll the dough into a 1 and ½ inch thick roll.


Chill the roll.


Cut into ¼ inch slices.


Place it on an aluminum foil lined cookie sheet.


Make a dent in the middle of each cookie.


Place the preserves in the hollow.


Bake in 400*F oven for about 10 - 12 minutes.


Cool on the cookie sheet.


Lace with icing.

Combine the ingredients.


Mix until smooth and the consistency is of thick cream.


Use as it is needed.

My great grandmother used to make this for my grandma when she was younger. We make them for our church sometimes for the chicken dinner. Everyone loves them!

CHEMISTRY INFORMATION - The pure substance in this recipe is the salt (NaCI), and sugar (C12H22O11). The homogeneous mixtures are the shortening, the confectioners sugar,the water, and the Butter extract. The cookie dough, after you finish mixing it, it is a homogeneous mixture. The heterogeneous mixtures in my recipe are the the preserves and the almond extract. You may be able to see different colors in the almond extract, and the preserves look different colors, and have different colors in them. The dough being rolled into a log is a physical change, so is the dough chilling in the refrigerator. The bottom of the cookies becoming brown, and the shrinking and growing of the cookies are both clues that chemical changes are happening.
