ELLEN’S COTTAGE CHEESE PANCAKES

Ingredients

  • 2 C cottage cheese
  • 2 eggs
  • a little oil
  • 1/2 C flour (or more)
  • 1 T sugar
  • Cinnamon (optional)

Directions

  • Sieve cheese.
  • Mix all ingredients together.
  • Fry on teflon or lightly greased pan.
  • Make very small pancakes, about 2” in diameter.
