Why I Love This Recipe
I have always loved tamale pie, and this is one of my favorites - especially after I have changed it to what I want in it so I don't have to pick out the stuff i don't like :)
Ingredients You'll Need
1 yellow onion, chopped and caramelized
3/4 lb ground beef
2 8oz cans seasoned tomato sauce
1 can corn, drained
1/2 c chopped olives
2 T roasted garlic
1 T sugar
1 t salt
2 1/2 t chili powder
dash pepper
1 1/2 c shredded mexican blend cheese
Corn meal top
3/4 c yellow cornmeal
1/2 t salt
2 c cold spring water
1 T butter
Directions
Brown ground beef and drain fat, add everything but cheese and mix well
Simmer for 20 to 25 minutes or until thickened
Remove from heat and add cheese, stir until melted
Pour mixture into 9x12 baking dish
Corn Meal Top
Stir cornmeal and salt into cold water, heat and stir until thick
Add butter and mix well
Spoon over meat mixture, making narrow stripes
Bake at 375 degrees for 40 minutes or until top is browned
